Houston’s Spinach Dip (12 to 16 servings)1 Medium onion, chopped fine -
- 1/4 cup butter or margarine
- 1 8-oz package cream cheese
- 8 oz. Monterey Jack cheese, shredded
- 2 10-oz. Boxes frozen spinach, thawed and drained
- 1 cup artichoke hearts
- 1/4 cup Parmesan cheese
Preheat oven to 350. Saute onion with butter. To the onion mixture, add cream cheese and Monterey Jack cheese until melted. Stir in spinach and artichoke hearts. Transfer mixture into a 8 x 12-inch greased baking dish. Top with Parmesan cheese. Bake 15 to 25 minutes until cheese is melted. Serve with chips, sour cream and salsa on the side, optional.
